Sourdough Flatbread
This simple and delicious flatbread recipe is perfect for a quick snack or as a base for your favorite toppings. Made with just a few ingredients, it’s easy to prepare and can be customized with your choice of spices and herbs.

Ingredients
For 4 flatbreads
- 100 g of sourdough starter/discard
- 100 g of Greek yogurt
- 140 g of flour
- 1 tbsp of olive oil
- 1 tsp of salt
- 1 tsp of baking powder
- spices of your choice (e.g., garlic powder, rosemary, oregano, thyme, Italian seasoning mix)
Instructions
Mix the wet ingredients
- In a large bowl, combine the sourdough starter, Greek yogurt, and olive oil.
- Mix well until smooth and creamy.
Add the dry ingredients
- In a separate bowl, whisk together the flour, salt, baking powder, and any spices you like.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- If the dough is too sticky, add a little more flour, one tablespoon at a time, until it comes together.
- Knead the dough lightly in the bowl until it is smooth and elastic.
- Cover the bowl with a clean kitchen towel and let the dough rest for about 30 minutes.

Shape the flatbreads
- After the dough has rested, divide it into 4 equal portions.
- On a lightly floured surface, roll each portion into a thin circle or oval shape, about 1/4 inch thick.
- Heat a large skillet or griddle over medium-high heat.
- Cook each flatbread for 2-3 minutes on each side, or until golden brown spots appear.
- Remove from the skillet and keep warm while you cook the remaining flatbreads.
- Serve the flatbreads warm, with your favorite toppings or dips.
Notes & Variations
- You can mix olive oil with garlic, salt and parsley and brush it on the warm flatbreads for extra flavor.
- Goes well with hummus, tzatziki, or as a base for sandwiches and wraps.
- Soups and stews are also great accompaniments for this flatbread.
